Sweet cookies filled with quince jam

 

One day in 1994, José Saía, who was baking bakery products at home, and Julio Tereñes, who went to look for a customer and met an old work colleague he had not seen for a long time, met by chance; and at that moment they were able to fulfill their longing: to make a pepa cookie with the artisan quality of a bakery but that could be produced in an industrial way.

The name came from the union of Tere (Surname of one of the creators) and Pin (Saia's nickname) and they are the typical vanilla cookies with a circle of solid quince paste on its surface.

The ingredients are: Vanilla essence, butter, lemon zest, egg, sugar, dulce de membrillo, flour and baking powder.

It is ideal to accompany an exquisite breakfast with coffee or mate, or in a refreshing afternoon with the same infusions
